Based on facility tour, interview, and review of policy/procedure, the facility failed to ensure dry good scoops, used for distribution of the dry goods, were stored in a sanitary manner in order to maintain infection control.

The findings:

Tour of the Food & Dietary Department, including the facility's kitchen, was conducted on 7/31/12 beginning at approximately 9:30 a.m. During the tour, a large plastic bin was found to contain rice. A scoop was setting in the rice within the bin, the handle in contact with the rice. When brought to attention of the chef, s/he removed the scoop and placed it within the scoop holder on the side of the bin. A second large plastic bin was found to contain barley. A scoop was also setting in the barley in the bin, the handle in contact with the barley. Staff stated they had clean scoops that they would use to replace the other scoops.

The facility's policy titled Operational Standard: Storage of Food and Supplies, last revised 6/11, stated the following, in part: "IV. STORAGE: Food Items - Drybulk foods (flour, sugar, cereals) Storage - In metal or plastic containers with tight lids. Store scoops for these items in a separate holder."
