Based on observation and interview, the hospital failed to maintain the dietary department in a manner that promotes the well-being of patients by not providing a sanitary environment in the food preparation areas. Findings:
On 11/30/2010 at 8:50 AM observation of the dietary department revealed the following:
1. There was a thick build-up of dirt and grime on the flooring in the room where the clean pots, pans and juice dispenser were stored. There was a thick build-up of dirt and grime on the vents of the window air conditioner in this room. The air conditioner was blowing directly over the clean items.
2. The middle sink of the 3 compartment sinks was leaking.
3. There was a large fan above the 3 compartment sink that was blowing directly over the food preparation area. The blades of the fan had thick grime with multiple strings of dirt and grime hanging from the blades.
4. The ice maker was soiled on the inside and the top of the machine was dusty. The ice scoop was stored upright in the dust on top of the machine and it contained water.
5. There was a thick layer of dirt and grime on the shelving that contained the spices and seasonings.
6. The vents over the cook stove were grossly dirty.
7. Both oven doors would not remain in a closed position without wedges of aluminum foil staff used to keep the doors in an upright position while food was cooking in the ovens.
8. The flooring under all kitchen appliances had a thick build-up of dirt, debris and grime.
9. There was dried food substances and debris on the bottom shelving of the double door refrigerator and the double and triple door freezers.
10. The shelving was soiled in the pantry. Two plastic crates and a fluorescent light cover were stored behind the entrance door to the pantry and the items were thick with dust. The flooring beneath the items was dusty with visible debris.
In an interview on 12/01/2010 at 12:30 PM S1 Administrator stated that dietary personnel did not inform her that the kitchen needed a thorough cleaning.
