The Hospital reported a census of 12 patients with 20 medical records reviewed. Based on observation, policy review, and staff interview the Hospital failed to ensure the dietary department followed the policy to record monitored dishwasher temperatures twice daily.
Findings include:
- Hospital policy titled "Dietary Hazard Analysis Critical Control Points" reviewed on 9/26/12 at 11:00am directs staff, "Procedures: 1. ...To record twice daily, once in the A.M. and once in the P.M. and under, "(d) dishwasher wash and rinse temperature-record on form posted in dishwasher room."
- Observation in the food service area on 9/26/12 at 9:45am revealed staff lacked a dishwasher log used for monitoring water temperatures. The Hospital failed to assure staff follow their policy for recording dishwasher wash and rinse temperatures.
Staff A, the dietary manager interviewed on 9/26/12 at 10:00am acknowledged the staff failed to record the dishwasher wash and rinse temperatures.
