Based on record review and interview it was determined that the facility failed to have a therapeutic diet manual available to all staff with a publication date no more than 5 years old and which was approved by the dietitian and medical staff.

The findings are:

On the afternoon of 4/26/10 the Food Service Director was asked to provide the Diet Manual used by the facility. At 3:40 PM the Diet Manual was provided and revealed a 2000 Edition of the Florida Diet Manual. The contents did not contain any documentation indicating the manual was reviewed and/or approved by anyone. On 4/27/10 at 9:50 AM interview with the Director of Nursing/Corporate Operations Officer reported no knowledge of whether the Diet Manual was reviewed by the dietitian or if a more recent edition was available for use to the facility. Stated the question would need to be directed to the Food Service Director.
