Based on review of facility policy, observation, and interview, the facility failed to ensure milk products were not expired in 2 of 6 refrigerators observed and failed to ensure milk products were maintained at the appropriate temperature during 2 of 3 observations made.
The findings included:
Review of facility policy "Cold Storage Temperatures" last revised 1/2018, revealed "...temperatures of food storage areas and cold food...monitored and action is taken to maintain temperatures within range recommended by licensing and surveying agencies: Refrigerated storage...minimum 34° [degrees] F [fahrenheit]...maximum 41° F..."
Observation and interview with the Team Leader on 7/18/18 at 3:05 PM, of the patient refrigerator located on 6 East, revealed two 240 milliliters (ml) cartons of 2% milk with an expiration date of 7/16/18. Interview confirmed the milk was expired and was available for patient use.
Observation and interview with Registered Nurse (RN) #1 on 7/18/18 at 3:25 PM, of the patient refrigerator on 8 East, revealed one 240 ml carton of 2% of milk with an expiration date of 7/6/18. Interview confirmed the milk was expired and was available for patient use.
Observation and interview with the Regional Director and the Chef on 7/18/18 at 4:10 PM, of the cold milk cooler in the dietary department, revealed:
1 carton of 2% milk 47.7° F
1 carton of whole milk 51.0° F
1 carton of Chocolate milk 43.7° F
Interview confirmed the temperature of the milk was above the maximum temperature for cold food storage.
Observation and interview with the Chef on 7/18/18 at 4:40 PM, of the food cart on 12 East, revealed one carton of 2% milk with a temperature was 53.6° F. Interview confirmed the temperature of the milk was above the maximum temperature for cold food storage.
